Our mission is to bring the highest quality New Mexico Chile to those in need. 

Los Roast Chile is sourced from farms near Hatch and is verified by the New Mexico Department of Agriculture as New Mexico True.

We roast during New Mexico Chile Season outside of grocery stores and restaurants in Portland, Oregon— our adopted city. 

Seasonal roasting lent time to develop relationships and recipes in New Mexico the off season.

We built our company through invaluable relationships with chile farmers and others in the industry. We’re now both places, living and working in Portland and New Mexico.

Southern New Mexico is an ideal chile climate because of its arid environment and sandy soil—hot days and cool desert nights. Farmers in the Mesilla Valley have been growing chile for generations. 

In 2014, we became year-round , launching a shelf-stable product line of Red and Green Chile Sauce, Chopped Chile, Green Chile Salsa, and New Mexico Grown Smoked Chipotles in adobo sauce. 

We are the Hatch Portal to the Pacific Northwest and beyond, contributing a steady stream of roasted, peeled, chopped green chile and award winning chile sauces where we can: to stores, markets, at restaurants and directly to you.
