Chipotle Pulled Pork Sandwiches

Ingredients:
3-4 lbs pork shoulder (pork butt), trimmed of excess fat
1 large onion, thinly sliced
4 cloves garlic, minced
2 jars Chipotles in Adobo Puree
1 cup chicken broth
1/4 cup apple cider vinegar
1 tablespoon smoked paprika
1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
Instructions
1. Prepare the Pork:
Pat the pork shoulder dry with paper towels.
Season it generously with salt and black pepper on all sides.
2. Sear the Pork:
In a large skillet, heat the vegetable oil over medium-high heat.
Once the oil is hot, add the pork shoulder and sear on all sides until browned, about 2-3 minutes per side.
Remove the pork from the skillet and set aside.
3 Prepare the Chipotle Mixture:
In a medium bowl, combine the chipotles in adobo puree, chicken broth, apple cider vinegar, smoked paprika, cumin, oregano, minced garlic, and a pinch of salt and pepper. Mix well to combine.
4. Layer the Crock Pot:
Spread the sliced onions evenly on the bottom of the crock pot.
Place the seared pork shoulder on top of the onions.
5. Add the Sauce:
Pour the chipotle mixture over the pork, ensuring the pork is well coated.
6. Cook:
Cover the crock pot with the lid.
Cook on low for 8-10 hours or on high for 4-6 hours, until the pork is tender and easily shredded with a fork.
7. Shred the Pork:
Once the pork is done cooking, remove it from the crock pot and place it on a cutting board.
Use two forks to shred the pork into bite-sized pieces.
8. Combine and Serve:
Return the shredded pork to the crock pot and mix it with the juices and onions.
Let it sit on the “warm” setting for about 15-20 minutes to absorb the flavors.
9. Serve:
Serve the pulled pork on slider buns, tacos, or over rice.
Top with coleslaw, pickled onions, or your favorite toppings.
Tips:
• Adjust the amount of chipotles in adobo puree according to your heat preference. If you prefer a milder flavor, use half the can and replace the remaining amount with additional chicken broth.
• Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
