Cast Iron Green Chile Asadero Cheese Chorizo
A Flavorful and Hearty Dish Perfect for Any Occasion.

Cooking Time: Approximately 30-35 minutes
Ingredients:
• 2 tbsp olive oil
• 1 lb Mexican chorizo, casing removed
• 1 cup diced onions
• 2 cloves garlic, minced
• 1 cup Los Roast Green Chile Chopped
• 2 cups shredded Asadero cheese
• 1/4 cup chopped fresh cilantro
• Salt and pepper to taste
• Warm tortillas, for serving
Instructions:
1. Preheat the Cast Iron Skillet:
Place your cast iron skillet on the stove over medium heat. Add the olive oil and allow it to heat up.
2. Cook the Chorizo:
Add the chorizo to the skillet, breaking it up with a wooden spoon. Cook for about 7-10 minutes, or until fully cooked and browned. Remove the chorizo from the skillet and set aside, leaving the drippings in the pan.
3. Sauté Onions and Garlic:
Add the diced onions to the skillet and sauté until they become translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
4. Add Green Chile:
Stir in the diced Los Roast Green Chile Chopped and cook for another 3-4 minutes, allowing the flavors to meld together.
5. Combine Ingredients:
Return the cooked chorizo to the skillet and mix well with the onion, garlic, and green chile mixture. Season with salt and pepper to taste.
6. Melt the Cheese:
Sprinkle the shredded Asadero cheese evenly over the top of the mixture. Reduce the heat to low and cover the skillet. Let the cheese melt for about 5 minutes.
7 .Garnish and Serve:
Once the cheese is melted and bubbly, sprinkle the chopped cilantro on top. Serve hot with warm tortillas or chips
